Banana Muffins Recipe
Ingredients
50g Bran Flakes
75ml warm milk
1 medium banana, mashed
1 egg yolk
50 ml sunflower oil
55 g raisins
60 g light brown sugar
65 g wholemeal flour
Half tsp bicarbonate of soda
Half tsp baking powder
One eighth tsp salt
Half tsp cinnamon
Quarter tsp ginger
40 g chopped raisins
Method
Preheat the oven to 180C/350F Fan 160C Gas Mark 4. Line the mini muffin tray with paper cases. Mix together the Bran Flakes, milk and banana and leave for 5 minutes. Transfer to a food processor with egg, oil, raisins and sugar. Whiz for a minutes to combine. Add the flour, bicarbonate of soda, baking powder, salt cinnamon and ginger and pulse to combine. Spoon into mini muffin cases (about 1 tbsp for each mini muffin). Bake for 12 to 14 minutes.
